Ingredients
  

  • 1 cup peanut butter
  • 1/3 cup pure maple syrup
  • 2 eggs
  • 1 1/2 cups rolled oats
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon sea salt
  • 2/3 cup chocolate chips

Method
 

Preheat oven to 350°F (175°C) and line a baking sheet.
    In a bowl, mix peanut butter, maple syrup, and eggs until smooth.
      Add oats, baking soda, cinnamon, and salt, stirring until combined.
        Fold in chocolate chips.
          Scoop dough onto baking sheet, forming cookie shapes.
            Bake for 10–12 minutes until edges are set.
              Let cool on the baking sheet before removing.

                Notes

                Use well-mixed peanut butter for best texture. Cookies will not brown much but will firm up as they cool. Store in the fridge for up to 5 days.
