Easy Coffee Cake Cookies with Crumb Topping

Soft cinnamon cookies topped with buttery streusel crumbs and sweet glaze for an easy dessert inspired by classic coffee cake.

Ingredients
  

For the Streusel:
  • * 1/2 cup all-purpose flour
  • * 1/3 cup brown sugar
  • * 1 teaspoon ground cinnamon
  • * 4 tablespoons unsalted butter melted
For the Cookies:
  • * 1/2 cup unsalted butter softened
  • * 1/2 cup brown sugar
  • * 1/4 cup granulated sugar
  • * 1 large egg
  • * 1 teaspoon vanilla extract
  • * 1 3/4 cups all-purpose flour
  • * 1/2 teaspoon baking powder
  • * 1/2 teaspoon baking soda
  • * 1/2 teaspoon salt
  • * 1 teaspoon ground cinnamon
For the Glaze:
  • * 3/4 cup powdered sugar
  • * 1 1/2 tablespoons milk
  • * 1/2 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Make the streusel by mixing flour, brown sugar, cinnamon, and melted butter until crumbly. Set aside.
  3. In a large bowl, cream butter, brown sugar, and granulated sugar until fluffy.
  4. Add egg and vanilla extract and mix until combined.
  5. Stir in flour, baking powder, baking soda, salt, and cinnamon until a soft dough forms.
  6. Scoop dough balls onto prepared baking sheets and flatten slightly.
  7. Top each cookie generously with streusel and gently press it into the dough.
  8. Bake for 10-12 minutes until edges are lightly golden and centers still look soft.
  9. Cool completely on a wire rack.
  10. Whisk together powdered sugar, milk, and vanilla for the glaze and drizzle over cooled cookies.

Notes

Store cookies in an airtight container for up to 4 days. Chill the streusel briefly if your kitchen is warm to keep it crumbly while baking. Do not overbake the cookies or they’ll lose their soft texture.
