Easy No-Bake Cherry Tiramisu

Creamy no-bake tiramisu layered with cherry syrup, mascarpone cream, and almond notes for a fruity twist on the classic dessert.

Ingredients
  

  • 2 cups cherries fresh or frozen
  • 1/3 cup sugar
  • 1 teaspoon almond extract
  • 1 1/2 cups mascarpone cheese
  • 1 cup heavy cream
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 24 ladyfinger biscuits
  • 1/2 cup cherry syrup from cooked cherries
  • Fresh cherries for topping

Method
 

  1. Simmer cherries with sugar until soft, then cook down into a thick syrup. Cool completely.
  2. Whip mascarpone, heavy cream, powdered sugar, vanilla, and almond extract until smooth and thick.
  3. Quickly dip ladyfingers into cooled cherry syrup.
  4. Layer soaked ladyfingers, mascarpone cream, and cherries in a dish.
  5. Repeat layers and finish with cream on top.
  6. Chill for at least 4 hours or overnight.
  7. Top with fresh cherries before serving.

Notes

Do not over-soak ladyfingers or they will fall apart. Chill overnight for best texture. Store covered in the fridge for up to 3 days.
