Method
- Simmer cherries with sugar until soft, then cook down into a thick syrup. Cool completely.
- Whip mascarpone, heavy cream, powdered sugar, vanilla, and almond extract until smooth and thick.
- Quickly dip ladyfingers into cooled cherry syrup.
- Layer soaked ladyfingers, mascarpone cream, and cherries in a dish.
- Repeat layers and finish with cream on top.
- Chill for at least 4 hours or overnight.
- Top with fresh cherries before serving.
Notes
Do not over-soak ladyfingers or they will fall apart. Chill overnight for best texture. Store covered in the fridge for up to 3 days.
