Easy Rhubarb Bars with Buttery Crust

Sweet and tangy rhubarb bars with a buttery crust and soft jammy filling that are easy to make and perfect for spring and summer.

Ingredients
  

Crust
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 cup salted butter softened
Filling
  • 4 cups rhubarb chopped
  • 1 1/4 cups granulated sugar
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F and grease a 9x13-inch baking pan.
  2. Mix flour, sugar, and butter together until crumbly. Press firmly into prepared pan.
  3. Bake crust for 15 minutes until lightly golden around the edges.
  4. In a bowl, combine rhubarb, sugar, eggs, flour, and vanilla extract. Stir until evenly mixed.
  5. Pour filling over warm crust and spread evenly.
  6. Bake for 30 minutes or until center is mostly set.
  7. Cool completely before slicing into bars.

Notes

If using frozen rhubarb, thaw and drain well first. Chill bars before cutting for cleaner slices. Store covered in the refrigerator for up to 5 days.
