Homemade Nutter Butters Copycat Recipe

Soft homemade peanut butter sandwich cookies with creamy peanut butter filling inspired by the classic childhood favorite.

Ingredients
  

For the Cookies:
  • * 3/4 cup unsalted butter softened
  • * 3/4 cup creamy peanut butter
  • * 1 cup light brown sugar
  • * 1 large egg
  • * 1/2 teaspoon pure vanilla extract
  • * 1 1/2 cups all-purpose flour
  • * 1 teaspoon baking soda
  • * 1/4 teaspoon kosher salt
  • * 1/2 cup granulated sugar for rolling
For the Filling:
  • * 3/4 cup creamy peanut butter
  • * 1/2 cup unsalted butter softened
  • * 1 1/2 cups powdered sugar
  • * 1/4 teaspoon vanilla extract
  • * 2 tablespoons milk

Method
 

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, peanut butter, and brown sugar until smooth and fluffy.
  3. Add egg and vanilla extract and mix until combined.
  4. In a separate bowl, whisk flour, baking soda, and salt.
  5. Gradually add dry ingredients into wet ingredients until a soft dough forms.
  6. Scoop small portions of dough and shape into oval peanut-like shapes.
  7. Roll dough pieces in granulated sugar and place on prepared baking sheets.
  8. Lightly press crisscross patterns onto cookies using a fork.
  9. Bake for 9-11 minutes until edges are lightly golden.
  10. Cool cookies completely on a wire rack.
  11. For the filling, beat peanut butter, butter, powdered sugar, vanilla, and milk until smooth and fluffy.
  12. Spread filling onto half the cookies and sandwich with remaining cookies.

Notes

Store sandwich cookies in an airtight container for up to 5 days. Chill the dough briefly if it becomes too sticky to shape. Avoid overbaking to keep the cookies soft and chewy.
