Lemon Pound Cake Cookies Recipe

Ingredients
  

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2/3 cup salted butter softened
  • 3/4 cup white sugar
  • 2 large eggs
  • 2 teaspoons lemon extract
  • 1 tablespoon lemon zest optional

Method
 

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Beat butter and sugar together until light and fluffy.
  3. Add eggs one at a time, then mix in lemon extract and lemon zest if using.
  4. In another bowl, whisk flour and baking powder together.
  5. Gradually mix dry ingredients into wet ingredients until combined.
  6. Scoop dough onto prepared baking sheet, spacing cookies apart.
  7. Bake 10–12 minutes until edges are lightly golden. Cool completely before serving.

Notes
