Soft & Chewy Lemon Cookies Everyone Loves

Soft buttery lemon cookies packed with fresh lemon zest, lemon juice, and lemon extract for bright citrus flavor in every bite.

Ingredients
  

  • * 2 1/4 cups all-purpose flour
  • * 1/2 teaspoon baking soda
  • * 1/2 teaspoon baking powder
  • * 1/2 teaspoon salt
  • * 3/4 cup unsalted butter softened
  • * 1/2 cup brown sugar
  • * 1/2 cup granulated sugar
  • * 1 large egg
  • * 1 teaspoon vanilla extract
  • * 1/2 teaspoon lemon extract
  • * 2 tablespoons fresh lemon juice
  • * 2 tablespoons lemon zest
  • * 1/4 cup granulated sugar for rolling

Method
 

  1. In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
  2. In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in egg, vanilla extract, lemon extract, lemon juice, and lemon zest.
  4. Gradually add dry ingredients until a soft dough forms.
  5. Cover and chill dough for at least 30 minutes.
  6. Preheat oven to 350°F and line baking sheets with parchment paper.
  7. Roll dough into balls and coat lightly in granulated sugar.
  8. Place cookies on prepared baking sheet about 2 inches apart.
  9. Bake for 10-11 minutes until edges are set and centers still look soft.
  10. Cool on baking sheet for 5 minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container for up to 5 days. Avoid overbaking to keep the centers soft and chewy. Fresh lemon zest gives the strongest flavor, so don’t skip it.
