The Cookies That Taste Like Breakfast Pastries

Soft brown sugar cinnamon cookies with cake flour and a light glaze inspired by classic brown sugar pop tarts.

Ingredients
  

For the Cookies:
  • * 1 1/2 cups unsalted butter softened
  • * 1 3/4 cups light brown sugar packed
  • * 1/2 cup granulated sugar
  • * 2 large eggs
  • * 1 teaspoon vanilla extract
  • * 3 7/8 cups cake flour
  • * 2 tablespoons cornstarch
  • * 1 1/2 teaspoons baking powder
  • * 1 teaspoon baking soda
  • * 1 teaspoon kosher salt
  • * 1 1/2 teaspoons cinnamon
  • * 2 1/2 tablespoons milk
For the Glaze:
  • * 1 cup powdered sugar
  • * 2–3 tablespoons milk
  • * 1/2 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Cream butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs and vanilla extract and mix until smooth.
  4. In a separate bowl, whisk cake flour, cornstarch, baking powder, baking soda, salt, and cinnamon.
  5. Gradually mix dry ingredients into wet ingredients until dough forms.
  6. Scoop dough onto baking sheet and slightly flatten each piece.
  7. Bake for 11–12 minutes until edges are lightly golden and centers look soft.
  8. Cool completely before glazing.
  9. Mix powdered sugar, milk, and vanilla to form glaze and drizzle over cookies.

Notes

Store cookies in an airtight container for up to 4 days. For best texture, warm slightly before eating. Avoid overbaking to keep centers soft and pastry-like.
