The Cookies That Taste Like Real Tiramisu

Soft coffee sugar cookies topped with espresso mascarpone frosting and cocoa powder for a tiramisu-inspired dessert.

Ingredients
  

For the Cookies:
  • * 1/2 cup unsalted butter softened
  • * 3/4 cup granulated sugar
  • * 1 large egg
  • * 1 teaspoon vanilla extract
  • * 1 tablespoon espresso or strong coffee cooled
  • * 1 3/4 cups all-purpose flour
  • * 1/2 teaspoon baking powder
  • * 1/4 teaspoon salt
  • * 1 teaspoon instant espresso powder optional for stronger flavor
For the Mascarpone Frosting:
  • * 1 cup mascarpone cheese cold
  • * 1/2 cup powdered sugar
  • * 1–2 teaspoons espresso or strong coffee
  • * Cocoa powder for dusting

Method
 

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Cream butter and sugar until light and fluffy.
  3. Mix in egg, vanilla, and espresso or coffee until combined.
  4. Add flour, baking powder, salt, and espresso powder, mixing until a soft dough forms.
  5. Scoop dough onto prepared baking sheet.
  6. Bake for 10–11 minutes until edges are set and centers are soft.
  7. Cool completely before frosting.
  8. Whip mascarpone with powdered sugar and espresso until smooth.
  9. Spread or pipe frosting onto cooled cookies.
  10. Dust lightly with cocoa powder before serving.

Notes

Store in the refrigerator for up to 3 days due to mascarpone frosting. Do not frost warm cookies or the frosting will melt. Cookies are best served slightly chilled for stronger tiramisu flavor.
