The Softest Molasses Cookies I’ve Ever Made

Soft, chewy molasses cookies made with warm spices and oil for a tender, melt-in-your-mouth texture that stays soft for days.

Ingredients
  

  • 3/4 cup vegetable oil
  • 1 cup granulated sugar
  • 1 large egg
  • 1/4 cup full-flavor molasses
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt

Method
 

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Whisk oil, sugar, egg, and molasses until smooth and dark brown.
  3. In a separate bowl, mix flour, baking soda, cinnamon, ginger, cloves, and salt.
  4. Combine wet and dry ingredients and stir until a soft dough forms.
  5. Scoop dough into balls and place on baking sheet.
  6. Bake 9–11 minutes until edges are set and centers are soft.
  7. Cool on tray for 5–10 minutes before transferring.

Notes

Do not overbake or cookies will dry out quickly. Dough should be soft and slightly sticky before baking. Store airtight to maintain softness for several days.
