The Softest Strawberry Scones with Lemon Glaze

Soft and tender strawberry scones made with heavy cream and topped with a fresh lemon glaze for a bright, bakery-style breakfast treat.

Ingredients
  

For the Scones:
  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter cubed
  • 3/4 cup heavy cream plus extra for brushing
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries chopped
  • Zest of 1 lemon
For the Lemon Glaze:
  • 1 cup powdered sugar
  • 2 –3 tablespoons lemon juice

Method
 

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Mix flour, sugar, baking powder, salt, and lemon zest in a bowl.
  3. Cut in cold butter until mixture resembles coarse crumbs.
  4. Gently fold in chopped strawberries.
  5. Add heavy cream and vanilla, mixing just until dough comes together.
  6. Turn dough onto a floured surface and press into a circle about 1 inch thick.
  7. Cut into 8 wedges and place on baking sheet.
  8. Brush tops lightly with cream and bake for 18–20 minutes until golden.
  9. Mix powdered sugar and lemon juice, then drizzle over slightly cooled scones.

Notes

Do not overmix the dough or scones will turn dense. Fresh strawberries work best. Glaze after scones have cooled slightly for best texture and appearance.
