The Summer Dessert Everyone Scoops Twice

A creamy berry cheesecake salad made with strawberries, blueberries, marshmallows, and fluffy cheesecake filling for summer parties and holidays.

Ingredients
  

  • 2 lbs strawberries hulled and sliced
  • 1 pint blueberries
  • 1 8-oz. package cream cheese, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 1 large 16-oz. tub Cool Whip, thawed
  • 4 cups mini marshmallows

Method
 

  1. Wash, dry, and slice strawberries, then set berries aside.
  2. In a large bowl, beat softened cream cheese until smooth.
  3. Add powdered sugar, vanilla extract, and salt, then mix until creamy.
  4. Fold in Cool Whip gently until fully combined and fluffy.
  5. Add strawberries, blueberries, and mini marshmallows, then fold everything together carefully.
  6. Cover and chill for at least 1 hour before serving cold.

Notes

Dry the berries well before mixing to avoid watery filling. This dessert is best served the same day it’s made. Store leftovers in the refrigerator for up to 24 hours. Frozen berries are not recommended because they release too much liquid.
