Things I Learned the Hard Way

Don’t rush the folding step or you’ll end up with dense ice cream instead of creamy texture.

If you overwhip the cream, it starts turning buttery and ruins the base.

And don’t keep opening the freezer to check it—temperature changes slow down setting time.
