Easy Crumbl French Silk Pie Cookie

Easy Crumbl French Silk Pie Cookie

The first time I tried the French Silk Pie cookie from Crumbl, I immediately knew I was going to end up testing a homemade version in my kitchen. Mostly because driving across town every time a cookie craving hits is unrealistic, but also because I wanted that thick chocolate cookie texture without spending almost five dollars per cookie.

My first batch was terrible, honestly. The mousse slid right off the cookies, the centers baked too hard, and I somehow managed to overwhip the cream into something close to chocolate butter. After a few rounds of testing and way too much black cocoa powder on my countertops, this version finally became the one my family actually asks for by name.

Why This Recipe Works

Here’s the thing with Crumbl copycat recipes: a lot of them get the appearance right but completely miss the texture. What I figured out is that combining black cocoa with crushed Oreo cookies gives these cookies that deep chocolate flavor without making them dry. The mousse topping stays soft and creamy instead of overly thick, and chilling the cookies before serving makes everything taste way closer to the real thing.

Ingredient Notes

Black cocoa powder is what gives these cookies that dark Oreo-style flavor. I usually order mine from Amazon or grab King Arthur Baking brand when I can find it. Regular cocoa powder works in a pinch, but the cookies won’t taste quite the same.

For the Oreos, I crush the whole cookie filling and all. Less work and honestly it helps the cookie texture.

I use heavy whipping cream for both the mousse and the whipped topping. Don’t substitute milk here or the mousse won’t hold its shape properly.

How to Make It

Start with the cookie dough first. Cream together the butter and sugars until smooth, then mix in the egg and vanilla. Once that looks combined, stir in the flour, crushed Oreos, black cocoa powder, baking soda, and salt. The dough should feel soft but not sticky enough to coat your hands.

Roll the dough into large balls and gently flatten them slightly before baking. These cookies spread less than normal cookies, which is exactly what you want since they’re supposed to look like mini pie crusts. The centers might seem slightly underdone when they come out, but they firm up while cooling.

While the cookies cool, make the chocolate mousse. Melt the chocolate carefully because overheated chocolate turns grainy fast. I learned that after microwaving it too aggressively one Christmas baking weekend and having to start over completely.

Whip the heavy cream until soft peaks form, then fold in the melted chocolate mixture gently. Don’t rush this step. If you stir too hard, the mousse loses that light texture that makes these cookies actually taste like French silk pie instead of plain chocolate frosting.

Pipe or spoon the mousse onto the cooled cookies. I usually use a large round piping tip, but honestly a spoon works perfectly fine if you don’t feel like washing extra dishes.

Top each cookie with whipped cream and chocolate shavings. Then chill everything for at least 30 minutes before serving. Cold cookies taste way better here.

Things I Learned the Hard Way

Don’t overbake the cookies. They look slightly soft in the middle when they’re done, and that’s exactly how they should look.

If the mousse seems too loose, refrigerate it for 10 to 15 minutes before piping it onto the cookies.

Cheap chocolate chips don’t melt as smoothly for the mousse. I usually use Ghirardelli bars or Baker’s chocolate because they stay silky instead of grainy.

And don’t skip chilling the finished cookies. Warm mousse on warm cookies turns into a mess pretty quickly.

Storage & Serving Suggestions

Store these cookies in the refrigerator because of the mousse topping. They stay good for about 4 days in an airtight container, though the whipped cream looks best during the first two days.

I usually serve these straight from the fridge with coffee or cold milk. They’re rich enough that one cookie actually feels like a full dessert.
